I have a '99 E300TD.

Do I understand the owners' manual correctly, when it says that there is no fixed schedule for oil changes, that I need to wait for the MFD to display the "service required" message before taking it in? Oil changes are part of this "Flexible Service System"?

For gasoline engines, FSS calls for a service every 10,000-12,000 miles, depending on driving conditions.
Thats also the time interval between oil changes.
Diesel engines may be different, but it should be fine as long as following what the owner's manual says.

you can do oil service anytime you want too.

just reset the service time.

10,000 miles, huh - that's a long time between oil changes. My old truck specified oil changes every 7500 miles, but I always got it changed every 3000

What would you guys recommend - take it to the dealer for oil changes, or are the quickie oil change places good enough? I don't really have any space to do the oil changes myself (or I would), and the owners' manual ain't real helpful on how to change the oil either.

change oil every 8000 kilometers.

fuel filter every 30,000 kilometers.

air filter once you see that it began to curve or dirty.

it should be on the owner's manual?

anyway, am sending two models: 202 and 203.

in 202, you have to use the button on the istrument cluster while in 203, the multifunction sttering wheel button.

choose your wild.
